This lunch was incredible!

A handful of spring salad mix topped with finely sliced radicchio, sweet onions and avocado.... then surrounded with sauteed scallops and mushrooms (left over from last night's Tacos), hemp seeds, and sprouted pumpkin seeds. This whole beautiful mess drizzled with fire Cider, olive oil and a sprinkle of pink salt. Absolutely heavenly! Feeding our bodies, hearts and BRAINS!

As always, if you are feeding a loved one via Gastric Feed Tube, you can blend this whole thing in your blendtec or vitamix with bone broth, and... voila!

During times of change, stress, or transition, its ESPECIALLY important to support our nervous systems by feeding our brains the foods they love. Of course we suggest you love and support your body and brain in this way everyday, AND most certainly when you are needing extra support, physically, mentally or emotionally.
As y'all know by now, our go-to favorite meal is salad with grated beets, radishes, onions and avocados, along with seared wild salmon and grilled asparagus. Drench the whole thing in olive oil, balsamic vinegar (or our epic Fire Cider!) and spicy herbed salt, and voila!
This week we've added a heavenly home brewed chicken and medicinal herb bone broth to our meals, giving our gut and immune systems some extra love!
As always, this whole beautiful schmorgasbord can be thrown in the blendtec/vitamix with bone broth or healthy liquid of your choice and well pureed to create an amazingly healthy and wholesome HEALING gastric feed for anyone currently being fed in this manner.

Be Happy and Healthy everyone! (recipes below) <3

Fennel/Avo/Orange FAB salad

1 handful greens
1/2 chopped sweet walla walla onions
2 radishes, sliced
1/2 fennel bulb, sliced thin
1 ripe avo, cubed
1/2-1 cup grated golden beet
1/2 lemon juiced
1/4 cup olive or avocado oil
1 teas[poon salt/pepper
1-2 teaspoon sFire cider (optional)
1 ripe juicy orange, sliced
Mix all ingredients well in large bowl. Pile onto plates and serve with sautéed mushrooms and grilled salmon, or whatever you want 🙂 Sauteed Mushroom and grilled Sockeye Salmon

1/2 walla walla onion sliced
1 large garlic clove, finely grated
1 tablespoon avocado oil
Salt/pepper
Saute on med high until well browned

Pan Grilled Salmon

1 Tabsp Avo oil
Spicy salt
Moroccan Spice mix
2 salmon filets

Rinse and dry salmon, coat generously with spicy salt and Moroccan spice, sear on med/high heat for 3 mins each side. Serve atop sautéed mushrooms with Fennel Avocado salad. Enjoy!!! #feedabrain #eats

I used to think that death was a bad thing. 

Then I died. 🚑 

Death is just a transition that I chose not to take. 👼

I used to think that pain was a bad thing. 

Then I came back to life with a beaten and battered brain and body. 🤕

My existence was painful af!

I was unable to eat, walk, or talk, my left hand was completely flexed inward, and I was breathing and receiving nutrition through tubes. 🏥

Before this, most of my free time was spent writing and playing music. 🎸🎶🎙

Now I couldn’t talk and I couldn't wrap my fingers around a guitar, let alone play. 😟

I looked at my unusable left hand, and thinking that my life was over… wishing that I hadn’t woken up to suffer this.

Pain and loss overwhelmed me. 😢 

Then I saw my family and my friends and I began to think about my perspective.

I began to look at my state as temporary… as part of the adventure… and Adventures in Brain Injury was born. 🤕✊🕺

What if struggling were optional?

What if the struggle was not in the experience, but in the story I told myself about it… the drama that I attached to it. 🤔

Salmon that have to swim upstream are not struggling… 🐟 

Trees that are growing in harsh environments are not struggling… 🌲 

Bacteria that are exposed to antibiotics are not struggling. 🦠 

They do not tell themselves stories about their struggle to give it a deeper meaning… that is what humans do. 

We humans yearn to feel and to feel deeply. 

To feel more intensely, we tell stories... beautiful stories... dramatic stories… poetic stories… painful stories. 

To create feelings that are intensely good, the traditional story must precede with a narrative that brings us feelings which are intensely painful. 📖 

Often it is the story that creates the struggle, the beauty, and the triumph. 

The struggle is real because it is part of the story… The beauty is real because it is a part of the story… and the suffering is real because we make it real. 

We are the author of our stories! 📖

The experience is real, but the struggle is only as real as we make it. 

We can choose to tell a story of struggle, suffering, or pain; or a story of Adventure.

How to Wash a Brain 🧼 🧠

We are all brainwashed.

Most brain washing services are provided free of charge.

I used to enjoy the ease and comfort of allowing these services to wash my brain for me. But after sustaining a severe traumatic brain injury, I needed to find what was most effective in my healing. While searching far and wide, I realized that information from the mainstream health narrative was not helping. I have since recognized the power and importance of my own mind and have been cleaning my brain myself for many years now.

If you recognize the power and importance of your own mind.. If you like the idea of self empowerment, thinking for yourself... follow my easy three step instructions to being your own neurological custodian!

— Step one: determine who/what is qualified to be a part of your sensory diet.
Everything our senses are exposed to affect our neurology. Some of it we have no control over, while other aspects are within our control. Decide what shows and movies you watch, what books you read, what podcast you listen to, and above all, who the people are that you surround yourself with.

— Step two: turn off the "News" and don't rely on "fact checkers."
The News is a theater masquerading as reality. Go outside. Connect with the Earth... the sky... connect with your fellow man and woman. Talk about EACH OTHER'S realities... not the theater. Allow yourself to recalibrate to reality by staying away from all "News" sources, and allowing YOUR reality to be your reality.

— Step three: Be the change you want to see in the world.
Create your own TV show. You are the main character, and you are writing the script. In any story, the main character evolves. Decide what that evolution looks like and live that evolution. Be that evolution.

In line with being the change you want to see in the world, be sure to show interest and acceptance of differing perspectives. Everyone on this planet wants to be valued and accepted... including you! So show that you value and accept differing perspectives. Everyone is on their own journey and their beliefs will be their beliefs until those beliefs change.

As tricky as 2020 has been, I am so appreciative of the many blessings that this year brought.

2020 was definitely an impactful year for all!

A friend of mine shared this list with me and I’d love to share it with you.

Thank you for… the transparency to show us where change is needed.

Thank you for… further dividing us so we can learn to stand together.

Thank you for… turning up the volume on fears and "negative" emotions so we can learn how to truly feel them.

Thank you for… showing where we are closed off, so we can learn to open our hearts.

I like to use the marking of a new year to look over the year that is passing and to list some of what has happened in the past 365 days that I am appreciative to be a part of. Here are a few from my 2020 list (in no particular order):

Trained and certified Tora to be my service dog.

Spoke at the very first GLIA Conference with brilliant NeuroRehab specialists.

Won Glial Cell of the year award at the conference above.

Spoke at the Brain Injury Alliance of Oregon (BIAOR) Conference in Portland, OR with Dr. Glen Zielinski (before the lockdown).

Co-created a garden that fed me and my partner all summer.

Used technology to work with clients across the world to empower their recovery and rock their lives after brain injury.

My girlfriend took me to my very first drive-in movie! And… it was my favorite movie (Ferris Bueller‘s Day Off)! 😎

I am also appreciative of YOU! And I'd love to hear your list! So what are a few from your 2020 list? And... if you're really feeling motivated, I'd also love to hear your intentions for 2021!

Tonight's dinner was INSANE yummm... and prepared in about 20 mins... here's the recipe. Enjoy!

Lemon Pepper Prawns on a bed of cauliflower fried rice with garlic butter (or ghee) and carrot beet salad. 
PRO TIP: first prepare salad, then cauliflower rice, then prawns at the end so they are fresh and hot at serving time. 

PRAWNS: 
-1 large clove garlic, finally grated.
-1/2 organic lemon peel finely zested
-1 Tbsp avo oil
-2 Tbsp butter or ghee
-1/2 tsp real salt
-1/2 tsp org lemon pepper
-12 large prawns

Heat butter or ghee and oil on medium high heat with garlic and lemon zest. When bubly, add deveined prawns (peeled or unpeeled... we used deveined shell on wild Patagonia prawns)
Fry on med-high heat for about 2 mins each side. 

CAULIFLOWER RICE:
- 1/2 small onion chopped 
-1 or 2 large garlic cloves, finely grated
-1 inch piece of fresh ginger finely grated
-1 small head cauliflower,  grated. 
-1/4 cup avo oil
-  Real Salt and lemon pepper to taste... 

Fry all of the above on med-high heat for 5 mins til steamy and beginning to get golden. Turn off heat and leave partly covered to stay warm while you fry up the prawns. 

CARROT BEET SALAD:
-2 carrots grated
-2 stalks celery finely sliced
-1 small beet grated
-1/2 small onion, finely chopped
-2 Tbsp avo oil
-2 tsp balsamic or cider vinegar (or fire cider)
-Real salt and lemon pepper to taste. 
Mix all together. Add avo and cilantro or mint for extra goodness! 

TO SERVE: place a generous pile of salad on one side of plate, a generous pike of cauliflower rice on the other side. Top rice with fried prawns, then pour the buttery pan drippings over prawns and rice...
